Vegan Apple Dessert
Here is one of the 60 vegan healthy desserts of Rabia Combet: gourmet, healthy, light … and ethical. And gluten-free (by just changing the nature of vegetable milk).

Ingredients for 6 people
- 1 tsp chia seeds
- 60 ml oat milk (or almonds if gluten-free)
- 30 ml of olive oil
- 35 g of coconut sugar
- 70 g of whole buckwheat flour
- 40 g of hazelnut powder
- 1/2 tsp baking powder
- 570 g apples (about 4)
- 220 ml orange juice
- ½ tsp Raspberry agar
In a container, pour the chia seeds and milk. Wait 5 minutes before adding oil, sugar, flour, hazelnut powder and yeast. Mix by hand or in a robot, until a homogeneous paste is obtained.
Place cooking paper in the bottom of a 20 cm diameter hinged pan. Spread the dough over the entire surface and smooth with a spoon. Bake for 15 minutes at 160 °C.
While cooking the dough, wash, peel the apples and remove their heart, cut them first in 8, then cut each quarter again into 6 pieces.
Place in a skillet with 90 ml orange juice. Cook over medium heat, stirring regularly for 10 minutes.
Mix the rest of the juice with the agar, pour into the frying pan and continue cooking for 3 minutes.
Pour the compote on the biscuit. Leave to cool at room temperature and then refrigerate at least 2 hours before unmolding.
